Miso Salmon - Japanese Miso Grilled Salmon

Ingredients
2 salmon fillets
a little salt
2 tbsp white miso
2 tbsp honey
10 g butter

Instructions

Cut the salmon into pieces about 2-3 cm thick. Sprinkle a little salt over the salmon and leave it for about 10 minutes. Pat the surface dry with kitchen paper.

Put the white miso and honey in a small bowl and mix well until smooth. Place the salmon in a container and spread the honey miso mixture over both sides. Cover and marinate in the fridge overnight, or for at least 2 hours.

Take the salmon out of the fridge while you preheat the oven to 180 C fan-forced. You do not need to wipe off the honey miso mixture for this recipe.

Line a baking tray with baking paper and place the salmon on top. Bake for 10-12 minutes. If you want a little more colour on top, bake for 10 minutes, then grill for just 1-2 minutes at the end.

Place a small piece of butter on top of the hot salmon and let it melt. Serve with hot Japanese rice and miso soup.

This honey miso salmon is simple, but it tastes rich and comforting. The miso and honey make a sweet-savoury glaze, and the butter at the end adds a gentle richness. I think this recipe works especially well with the salmon fillets you can easily find in Australia. I often use New Zealand salmon from my local fishmonger because it has a good amount of fat, which works beautifully with the sweet miso and honey. For miso, I used Spiral Organic shiro miso, which I bought at IGA this time. The longer you marinate the salmon, the deeper the flavour becomes. I sometimes leave it for two nights. It is simple enough for a weeknight, but still feels like a gentle, satisfying Japanese meal.

Use white miso as the base for this recipe. It is usually milder, a little sweeter and less salty than red miso, so it gives the salmon a gentle flavour and is easier to bake without the miso tasting too strong. If you like, you can add a small amount of red miso too for a deeper sweet-savoury flavour.
How long should I marinate miso salmon?
At least 2 hours is a good starting point. If you have time, overnight gives the salmon a deeper miso flavour.
Can I cook miso salmon in a frying pan?
Yes. If cooking it in a frying pan, gently remove some of the miso mixture first so it does not burn too quickly. Add a little oil to the pan and cook the salmon over low to medium-low heat. Add a little of the miso mixture back near the end and finish cooking gently.
